With more than two decades spent in some of Australia’s most respected kitchens including Tetsuya’s and the hatted Margan Restaurant in the Hunter Valley, Ingram brings a refined yet approachable philosophy to the luxury hotel’s culinary offering. His arrival marks a new chapter not only for Crystalbrook Kingsley itself, but also for its celebrated rooftop restaurant Roundhouse, alongside Romberg’s and Ms Mary.

Perched high above Newcastle, Roundhouse has already earned a reputation as one of the city’s standout dining destinations, pairing sweeping harbour views with contemporary Australian cuisine. Under Ingram’s direction, the menu is embracing an even stronger connection to local produce and coastal flavours, from fresh snapper caught off Newcastle to ingredients sourced throughout the Hunter region.

New dishes include an open lasagne layered with tiger prawns, scallop and shellfish bisque, Goldband snapper with smoked mussel butter and coastal greens, and a richly earthy fricassee of local mushrooms with cavolo nero. Roundhouse has also transitioned to an à la carte format, giving guests the freedom to curate their own dining experience while soaking in one of the most striking rooftop settings in regional New South Wales.
