Watsons Bay Hotel Unveils $3 Million Transformation of Its Iconic Harbour front Decks

One of Sydney’s most iconic waterfront venues has entered a new chapter, with Watsons Bay Hotel revealing a $3 million transformation of its Top and Mid Decks.


The extensive refurbishment marks one of the most significant upgrades in the hotel’s 190-year history, reimagining how these elevated spaces are used while preserving what has always made them special: uninterrupted views across Sydney Harbour.

Bottomless Brunch

A thoughtful redesign that celebrates the harbour

Guided by Laundy Hotels principals Danielle and Shane Richardson, alongside Etic Design, the redesign focuses on flexibility, flow and comfort.


A seamless indoor–outdoor connection sits at the heart of the transformation. Wraparound bifold windows now open the Top Deck directly to the harbour breeze, while a new dry bar positioned along the windows ensures every guest can enjoy the view — whether dropping in for a drink or settling in for a long afternoon.


The Top Deck now accommodates up to 102 seated or 150 standing guests and includes a dedicated internal entrance and direct bathroom access, making it far more functional for weddings, private celebrations and events.



Watsons Bay Hotel Mid Deck and Sunset Room updates

The Mid Deck has also been completely refreshed, with new decking, banquette seating along the southern side and updated furniture designed for both style and comfort. The layout encourages guests to linger — a deliberate shift towards spaces that invite longer, more relaxed visits.


At mid-level, the Sunset Room & Bar has received a full update including new flooring, refreshed bathrooms and redesigned bar styling. The space retains its familiar Hamptons-inspired, beachside feel while offering improved flow and versatility for year-round use.

Coastal tones, warm textures and considered lighting

Across all spaces, the design palette draws directly from the surrounding environment. Soft coastal blues, deeper harbour tones and warm neutrals create a visual connection to the water without leaning into predictable nautical themes.


Lighting plays a key role in shaping the atmosphere. Oversized pendant fixtures provide sculptural impact by day and a warm, intimate glow by night, while textural details such as rattan, micro-cement and a crazy paving bar top add depth and refinement.


A new summer menu and signature experiences

In the kitchen, Head Chef Damian Heads has introduced a new summer menu inspired by Sydney’s coastal waters. Fresh seafood takes centre stage, including the venue’s signature chilled seafood platter, alongside grills and classic pub favourites.


The menu is complemented by a new summer cocktail list, quality wines and a strong local beer offering. The popular Bottomless Brunch continues every Saturday from 12pm, remaining a drawcard for locals and visitors alike.

Club Amalfi: a Mediterranean escape on Sydney Harbour

Adding to the excitement, Watsons Bay Hotel is launching Club Amalfi, Sydney’s first authentic waterfront beach club experience. Running once a month through summer, the transformed Top Deck will take on a distinctly European coastal feel, inspired by the Amalfi Coast and the South of France.


Expect Mediterranean-style shared plates, magnums of premium wine and long, leisurely Sunday afternoons overlooking the harbour — complete with music, dancing and that unmistakable Sydney summer energy.

The $3 million investment ensures Watsons Bay Hotel continues to evolve while remaining one of Sydney’s most recognisable waterfront destinations. From sunset cocktails to milestone celebrations, the redesigned decks offer spaces that effortlessly transition from casual social gatherings to large-scale events — all set against one of the world’s most spectacular backdrops.
